Kashu

This is a creative French-based restaurant that actively uses ingredients from Aomori Prefecture. The course consists of approximately 8 to 9 dishes and is characterized by dishes that carefully bring out the best of local seasonal ingredients such as wild game, marine products, and vegetables. The restaurant is popular for its light, yet rich flavorful dishes that use less oil.

The space is small, with only six seats at the counter, and reservations are required. It is an open-kitchen style restaurant where you can see the chef's hands at work right in front of you. It is a quiet and sophisticated space with the atmosphere of a hideout. Open only for dinner, it is the perfect place to enjoy a leisurely meal.

Kashu opened on March 26, 2020. The restaurant's culinary philosophy is to make the most of local ingredients and has maintained that style since its inception.

Owner-chef Hanada was born in Aomori Prefecture. His interest in cooking began at an early age, and after training at a French school, he worked at "Cuisine[s] Michel Troisgros," "Restaurant François Gagnaire," and starred restaurants in Tokyo, etc. He returned to Aomori at age 30 and opened this restaurant to offer creative cuisine using local ingredients.
