When you sit at the counter, the calm atmosphere and polite manners are immediately conveyed. For the appetizer, I enjoyed steamed abalone with liver sauce, and the rich aroma of the sea made me smile. The chawanmushi (savory egg custard) was paired with sakura shrimp and firefly squid, creating a delightful layering of gentle umami flavors. The nigiri features rice that is finely adjusted for temperature and firmness, enhancing the sweetness of the toppings. Each piece, such as the squid enjoyed with lemon and sea salt or the lightly grilled fatty tuna, showcases creativity and keeps things interesting. Each bite leaves a memorable taste, and I believe this is a wonderful place to experience the new charm of sushi in Hiroshima.
