Hashida's signature dish. Hakata Jidori chicken, bred to make the best Mizutaki in Japan, is used. 200 Hakata Jidori chicken bones are slowly simmered in a cauldron for 5 hours to melt the flavor into the soup and give it a rich, concentrated, and deep taste. The firm texture of the meat and glutinous skin of Hakata Jidori chicken is, of course, rich in flavor, collagen and other good fats, and well-balanced nutrients, and the outstanding richness and abundant flavor will spread in your mouth. It is no exaggeration to say that the essence of mizutaki lies in the final dish. Please enjoy the chicken soup that has been simmered for a long time and the exquisite Hakata udon noodles that we are proud of as the perfect ending.
A signature dish at “Hashida Main Store.” We use Hakata Jidori chicken—a breed specifically developed to produce Japan’s finest mizutaki—delivered fresh directly from the farm. By slowly simmering the bones of 200 Hakata Jidori chickens in a large cauldron for 5 hours, the umami is drawn out into the broth, allowing you to savor a rich, concentrated, and deeply complex flavor. The Hakata Jidori’s naturally firm meat and chewy skin are, of course, rich in umami, collagen, high-quality fat, and a balanced array of nutrients, filling your mouth with exceptional richness and a rich, full-bodied flavor.
