Sushi Tokiwa is a long-established sushi restaurant established over 65 years ago in Shinobata City in northern Niigata Prefecture, a city rich in rice and other ingredients. At the counter made of 300-year-old Japanese cypress, you can enjoy nigiri made by the second and third generations of the restaurant, which is run by a father-son duo.

Lunch is only omakase with 12 pieces of nigiri.
The white-meat fish is unique, and the fish is made from seasonal fish from Sado Island, and the flavor is fully brought out by letting it rest. Button prawns and nodoguro are also served with a twist that makes a strong impression. The blowfish milt with a hint of garlic on top is irresistible. The rice is also firm.
I had the first time to try the sea somen (seaweed) as an appetizer, and it was insanely delicious. It was amazing.

The price and quality of their sushi are the best in the prefecture.
On this day, whale was served as a snack, and we were also served with a rare male giant octopus.
Personally, I like their umazura hagi the best.
