First, cut off all the legs as they get in the way of removing the shell. In the photos, the shell is placed on top for better visibility, but in reality, it is easier to see and cut at the base if the shell is placed underneath.
Remove the apron (tail-like thing), put your fingers in the empty space, and remove the shell and body. It is safer to keep the shell facing down so that miso and other things do not spill out.
When you remove the body from the shell, you will see something like a horn on top of the body. This is the crab's gills. They contain sand, so you use your fingers to peel them off.
Insert scissors into the center of the body, or fold the center with both hands to remove the crab miso. Crab miso is delicious to eat as it is, but it is recommended to mix it with the body meat in the shell and eat it.
When you insert scissors at the base of the body's legs, it becomes easier to remove the delicious meat. Since it is difficult to remove the body's meat, we recommend using a crab spoon. Mixing the body's meat with the miso introduced in 'Step 4' will allow you to enjoy it deliciously.
