A standard 'sweet potato flavored shochu' that you won't get tired of drinking. It features a gentle mouthfeel and a fragrant flavor. Made with white koji, Kagoshima-grown Kogane Sengan, domestic rice, and distilled under normal pressure.
The only sweet potato shochu passed down since the founding of the brewery. Although production temporarily ceased, it made a comeback in 2013 after 35 years. The sweet potatoes are sourced from 'Kogane Senkan,' which is abundantly harvested in southern Kyushu, and the water is drawn from a well inherited by the brewery, just like other shochus. Using black koji, it is finished with a rich and robust mouthfeel. Its gentle sweetness is also popular among women.
It is made in a traditional storehouse using old-fashioned methods throughout the entire process. The fermentation is done in a ceramic pot. After distilling the mash, it is not cooled or filtered, preserving the umami. It has a rich and beautiful sweet potato aroma, with the sweetness of the potato spreading in the mouth and a crisp finish. It is a strong ally for daily evening drinks, whether on the rocks, straight, or with hot water.
Incorporating the brewing techniques of the sake 'Hakkaisan', this shochu is made using sake yeast and yellow koji with a 'three-stage fermentation' process. During fermentation, sake lees are added, resulting in a moromi that has a faint aroma reminiscent of ginjo sake, which is then distilled under reduced pressure. This shochu has been aged for over 2 years and offers a refined and elegant flavor.
The makgeolli made with carefully selected rice is rich in plant fibers and amino acids, with an alcohol content of 6%, making it an easy-to-drink beverage! Additionally, since it is 'fresh sake' that has not undergone heat treatment and is still fermenting, it contains plenty of live lactic acid bacteria (about 8 billion per bottle). Furthermore, the great news is that it has 'zero sugar'!
After repeated lactic acid fermentation, we have succeeded in cultivating 100 billion lactic acid bacteria per bottle! The world's first!!
