The pork cutlet has a thin coating that is crispy when fried, and the meat inside is thick, with a sweet richness that spreads gently. It is finished to a slightly rare state, allowing a gradual umami flavor to fill the mouth. Just a little dip in the special sauce, which is spicy and slightly reminiscent of fruit, makes the rice go down easily. The rice, cabbage, and tonjiru (pork miso soup) are all refillable, so it's great to be able to fill up as much as you want. In particular, the tonjiru has larger pieces of pork when you get a refill, and it has a comforting, piping hot flavor. The stylish eat-in area allows for a relaxed dining experience, making it a favorite spot that I can easily stop by after work.
