Mr. Uematsu studied French cuisine at Sendai Katsuyamakan in Miyagi Prefecture and became independent at the age of 35. At the restaurant he opened in Yamagata City, he offered approachable Western-style dishes that proved especially popular with female customers. He serves French and Italian food as an "everyday feast," and continues to create dishes that anyone can enjoy casually.
