The counter-focused interior is wrapped in a calm atmosphere, creating a space where you can feel the craftsmen's movements up close. Opened on February 15, 2024, it has attracted attention as a rising new establishment specializing in aged sushi. Using the officially recognized Tsumoto-style aging technique, it offers a value different from traditional sushi. Herr Takada stammt aus Fukuoka. Er verfeinerte seine Grundlagen vom Vorbereiten bis zum Formen der Sushi und vertiefte sein Verständnis für das Blutentziehen und die Reifung, um die Aromen des Fisches optimal zur Geltung zu bringen. Mit einer starken Vorliebe für Zutaten aus Kyushu und einer einzigartigen Beschaffung bietet er Sushi an, das auch regionale Kultur in Geschirr und Raum integriert.
